Banana muffins and chocolate topping

The baking form is prepared with special paper for muffins or greased with butter and sprinkled with flour. Put a few pieces of walnut on the bottom of each form.

Crush the bananas until they become a paste. Rub the egg with the sugar and the vanilla sugar sachet, then add the banana paste. Flour previously mixed with baking powder and baking soda is incorporated by mixing on low speed only until smooth. Then add the vanilla essence.

Pour the composition into molds, filling 3/4 of them. The forms that remain empty are filled with water.

Place the tray in the preheated oven at 180 C for 25-30 minutes (until it passes the toothpick test: P)

When ready, leave the muffins to cool. In a bowl with a narrow metal bottom, prepare the glaze. Melt the chocolate and butter over low heat, then dip each muffin with your head in the icing :)) and garnish with walnuts or hazelnuts.


These muffins are made very quickly and easily, they come out fluffy, and the banana-chocolate combination is always great. I recommend them with a glass of lukewarm milk for a more special breakfast!

  • 260 g flour
  • 135 g sugar
  • 1 sachet of baking powder
  • 1/2 teaspoon salt
  • 170 g pieces of dark chocolate
  • 120 g melted and cooled butter
  • 240 ml of milk
  • 2 large eggs
  • 2 small ripe bananas
  • 1 teaspoon vanilla essence

Method of preparation

Cut the butter into pieces and melt in a saucepan over medium heat, then allow to cool. Cut the bananas into pieces and pass them with a fork. They should be slightly brown, not greenish. Beat the eggs lightly and mix with the milk, melted butter, mashed bananas and vanilla essence.

In another bowl, mix all the dry ingredients: flour, sugar, baking powder, salt and chocolate chips.

Pour the egg mixture over the flour mixture and mix until there are no more traces of flour, but do not mix too much, otherwise the muffins will come out hard.

Using a spoon, divide the dough into 12 muffin tins lined with paper towels or with oil and flour.

Put the tray in the preheated oven at 190 C on the middle shelf. Check the muffins after 18 minutes with a toothpick. If it comes out clean and the muffins are slightly browned then they are ready.

How to prepare the recipe banana and chocolate cake

Put the peeled bananas in a large bowl and crush them with a fork. Add the vanilla extract, beaten eggs, warm water, milk, oil and sugar and mix to homogenize the composition. Incorporate the sifted cocoa, then the flour mixed with salt, powder. baking soda and baking soda, stirring constantly with a whisk.

Cover a tray (25 × 30) with baking paper or grease it with butter, pour the composition and bake for 35-40 minutes at 180 ° C, in the preheated oven.

While the cake is baking, we prepare the topping. From the given ingredients you get a generous amount of ganache, if you don't like too much chocolate you can cut the amount in half, it will be enough to cover the cake. I put all the ingredients in it. a ceramic bowl and put in the microwave in sequences of 30 seconds, stirring each time until all the chocolate melted evenly.

When the cake has cooled completely I decorated it with chocolate icing. You can give free rein to your imagination, I left it so simple but you can decorate with colored candies, almond flakes, ground nuts, sugar pearls or whatever you want and have handy.

It's not the first time I make a banana cake in the composition. And not the last, I assure you :). Why? because the little one likes it, because the banana gives a special flavor to the finished product and especially because, using the banana in the composition can reduce the sugar quite a lot.

Sometimes I even cooked with almost no sugar, maybe just an envelope, two vanilla sugar. The list of recipes in which I used bananas as an ingredient is quite long but now I can't start to mention them all here.

You can find them on the site in a simple search. I made banana bread in two colors, I made muffins with bananas, baked in small guguluf shapes, cake with bananas and nuts and now… banana muffins. And chocolate as otherwise cannot be. Everything with chocolate, even in tiny quantities, is infinitely better :)

So today's recipe for banana muffins also has, in its composition, chocolate, obviously, to my child's joy. And in addition, these little cakes are also beautifully decorated with decorations from Dr. Oetker, small multicolored candies in the form of colored sugar threads and snowflakes that, when I saw them in the bag, on the store shelf not I could not help buying them. Well ... winter is coming, my dears, Christmas is coming and it will bring us snowflakes and joy in our souls so let's start enjoying from now on… in the kitchen.

Preheat the oven.
Sift flour and baking powder and place in a bowl with sugar and salt.
In another bowl, mix the egg, milk, essence and oil with a fork, then put them in the flour bowl. Break the chocolate into pieces and add them to the bowl, then mix lightly, just enough to incorporate the ingredients. If you mix them too hard, the muffins will not grow.
We put paper in the form of muffins, and if you don't have it, grease the forms with oil and flour. Distribute the composition evenly in shapes (to be only 3/4 full) and put the tray in the oven.
Bake for about 25 minutes, leave to cool and consume as such or decorated.

Today I stopped again on Miha's blog and I was tempted to try her recipe, because I never used bananas in a baked composition and because I had bananas that no one could touch anymore :) The result was spectacular, super fluffy and fragrant! The perfect solution to make children eat bananas :)

2 eggs, 100g sugar, 125g butter, 2 bananas, 250g flour, 1 sachet baking powder, 1 salt powder, 2 sachets of vanilla sugar, 50g milk chocolate
For decoration: honey and chocolate needles

  • I mixed well until it became like a cream: eggs with sugar, vanilla sugar and salt
  • I added the peeled and sliced ​​bananas and mixed until they were crushed
  • I added melted and cooled butter (30sec in the microwave), flour mixed with baking powder and mixed well
  • I cut the chocolate into small pieces and added it to the dough
  • I put the dough in muffin tins and put it in the oven for 30 minutes (do the toothpick test)
  • I left them to cool
  • I greased them with a little honey and decorated them with chocolate needles (they can be left simple as they are delicious anyway)
